Moroccan Couscous

Shopping List:

  • 1/4 cup slivered almonds
  • 1/2 teaspoon grated lemon peel
  • 1 cup golden raisins
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • ¼ teaspoon ground turmeric
  • 1 ½ cups water
  • 1 1/2 cups couscous
  • 1/4 cup olive oil
  • 1/2 teaspoon salt

Cooking Directions

1.Toast sliced almonds in the toaster oven on medium setting. Reserve for later.

2.Grate the lemon with the small holes on a cheese grater, removing only the yellow peel and not the white pith.

3. Measure raisins, cinnamon, ginger, salt, and lemon zest in a bowl.

4. Heat water in the microwave until boiling hot, about 1-2 minutes depending on your microwave. Put couscous in a Tupperware. Pour boiling water over couscous. Cover Tupperware tightly with lid. Let sit undisturbed for 5 minutes

5. Fluff couscous with a fork

6. Gently stir raisin mixture and olive oil into couscous. Stir in toasted almonds.

7. Serve!
